Oh, sweet obsession. It rears its beautiful head every week. Wednesday afternoon specifically, when we start preparing for Thursday’s Smokeathon. Not sure why the phrase “rears its ugly head” ever became popular. Obsessions are beautiful, gorgeous, sexy, stupendous. Demonic maybe, but certainly not ugly. At least not this one. My obsession with bones. Specifically-baby back rib bones. I want to taste them fully clothed, I want to savor them completely naked. (The bones, I mean. Hmm, actually the other sounds like a good idea too.) I want to make sure we cook them so that their delicious meat doesn’t just fall off. No, I want to still have to initiate the separation, and then quickly consummate the deal. Oh man, am I obsessed.


Baby Back Pork Rib Bones


It’s probably worse than normal this week because we’ve been preparing for a couple of week-ending catering events and I’ve been smelling them cook cycle after cycle for three days running. People often tell us “You guys are so lucky. You get to eat delicious ribs every day.” Oh, I wish that were the case. You can’t just yank a rib off the end of a rack because your stomach is growling. Besides the fact that it would be totally sacrilegious to porcine discipline to do that, this IS a business after all. And pleasing customers always comes first. So my obsession goes on. Obsess with me, my friends. Let’s listen to a few tunes this week about those miracles of skeletal construction. And maybe, just maybe, I’ll get a chance to relieve my obsession a bit by week’s end. Have a wonderful and safe summer weekend everyone. Hopefully with some freshly smoked ribs. Save one for me willya?
